Getting enough calories

Hi, my name is Anna & I've been using MFP for a while now. I've lost about 8 lbs. but a real struggle at age 70, not able to exercise as much as I'd like due to arthritis in my spine. I saw a dietician a few months ago who told me I was not eating enough. But my problem is reaching 1200 + calories per day. I eat 3 meals & 2 snacks but my total usually comes to about 1100-1150. I am not hungry at this level but she says not enough. Any suggestions? I usually have oatmeal or eggs for breakfast, a sandwich on whole wheat bread for lunch, nuts and fruit for snacks & chicken or fish with veggies and potato or brown rice for dinner. Help!!

There are all kinds of high calorie things you can eat. Peanut butter, milkshakes, chocolate. Add some chips along with the sandwich. Add peanut butter and cream to your oatmeal. Eat nut butters instead of whole nuts. Add plenty of butter or ranch to your vegetables.0

Most people underestimate how much they eat so your probably eating more than 1200, there you go problem solved.

The dietitians underreported their energy intake obtained from the food records by an average of 223 +/- 116 kcal/day, which was not different from their energy expenditure. Participants in the control group, as hypothesized, significantly underreported their energy intake (429 +/- 142 kcal/day, P < .05).
Which led to this conclusion:
Dietitians estimated their energy intake more accurately than non-dietitians, suggesting that familiarity with and interest in keeping food records may lead to more reliable estimates of energy intake.

I really like puff pastry. I ate a croissant yesterday and it added some energy to my diet without filling me up too much.
You can also roll sausages in puff pastry, turn it into burek or bake it as it is with some marmalade. Last week, I had an Indian bread called paratha which I thought was similar to puff pastry.
Puff pastry is so versatile.1
