I teach at a community college and many days a week have only 10 minutes to eat between classes. (Plus I have labs with no food allowed so my dining time can be tight!) I've really been digging on salads that reuse dinner proteins. I'll use a base of baby romaine and baby spinach, chop up some tomato, cucumber, and avocado. Then chop up a piece of whatever meat we've had recently for dinner. I've done this with maple marinate salmon, French's crunch onion chicken, grilled turkey tenderloin, and even turkey or bison burgers. If the meat is amenable to it, I'll throw in an ounce of shredded Swiss cheese and/or roasted pumpkin seeds and/or raw nuts. I've found these salads need no dressing and I can keep them in a lunch box with a couple ice packs, so it's portable and cold. Cheers!
