Black bean and corn salsa

My aunt made this for a get together and it is so amazing!!! :drinker:

Black bean and corn salsa! great with baked tostitos!

Original Recipe Yield 72 servings
Ingredients

1 (15 ounce) can yellow corn, drained
1 (15 ounce) can white corn, drained
2 (15 ounce) cans black beans, drained and rinsed
1 (14.5 ounce) can Italian-style diced tomatoes, drained
1 bunch finely chopped cilantro
5 green onions, finely sliced
1 small red onion, finely chopped
1 red bell pepper, seeded and chopped
1 tablespoon minced garlic
1/4 cup lime juice
1 avocado - peeled, pitted, and diced
2 tablespoons olive oil, or to taste

Stir the yellow and white corn, black beans, tomatoes, cilantro, green onion, red onion, bell pepper, and garlic in a large bowl. Gently mix in the lime juice and avocado. Drizzle with olive oil to serve.

    This is exactly what I needed today! I'm in charge if appetizers for a dinner tonight with a Mexican theme and have been looking for yummy but still healthy recipes beyond the standard tomato salsa and guacamole. Thanks! You just made my day :-)

    There are 16 T. in 1 cup, so if the recipe makes 4 1/2 cups then a serving size would be 1 T. ((4.5x16=72))

    Who could only eat 1 serving of this! Yum.

    yeah i think 1 or 2 tablespoons is a serving which makes sense when your at a get together but if you have it at home for yourself... well then there's no way i can only eat 2 tablespoons!
