    @Chapter_3 you have my attention. Smoker? Oven? Grill? Sous Vide? Spices?

    this is a 3.5lb Picanha. I can honestly say this is the easiest piece of meat I have ever prepared! I dry brined (salt only) for 1/2 day and took it out the fridge around 3:30. Preheat oven to 275° …. At 5:00pm, I added pepper and dried oregano all over it! Put in oven for 25-30 minutes. Instant read thermometer at 110 to 115. Take out and tent with foil… let rest while oven is set to 500. Once oven hits 500, switch to broil. Broil for 7-12 minutes… 10 inches from flame watching closely. Let sit 5-10 minutes before slicing. I like to slice in 1” to 1.25” increments… Last night we enjoyed with fresh chimichurrri sauce…Seriously, it is the BEST! You can skip eating the fat but that’s the best part. My nutrition plan is primarily P and F with very few carbs.

    @Chapter_3 thanks. If I expect DW to help me eat it, the internal temp will need to be at least 129. And yes, for me there would be no trimmings left on the plate.

    I use Pinterest for most recipes. @_JeffreyD_ there is a traditional Brazilian recipe that involves the grill. Looks delicious. Believe that way will allow you to cook several skewers medium rare, and several skewers well done. (Or ruined in my book!) 🤣 whatever your fancy. The next time we have Picanha, I’ll go this route because it looks like a fun journey to heaven.

    @_JeffreyD_ HAHA I'm so sorry for sending you down the rabbit hole! There is so much content out there that it's really easy to deep dive. When finding out I'm 9 I also learned I'm "wing 1" which is fitting--I've always been a rule follower, for better or for worse. DH is type 8 - the challenger - and after he finished the test he literally came back to the room to report his results and said "this is bullsh*t" :D

    @Chapter_3 - That dish looks like a fine restaurant presentation! You could go into business with that. We are NOT big beef eaters but I'd be tempted. (DH is a heart patient, I have no gallbladder).

    @astroamy - Yep, you are getting within 15% of goal weight. Stalls are part of the journey. I figure it lets your body and your people get used to the new size. And the extra-steps-mentality is a great way to spin any inconvenience. It changes a slog into an opportunity!

    @everyone - This enneagram thing looks intriguing. I've heard of it before but never decided which type I belonged. Definitely a rabbit hole. But it seems like we all use different mind-sets to losing weight. ¡Qué interesante!

    @Skyleen75 - I love all those classes. I may try to fill in my former early-morning walking hours with some barre or other classes.
