You can't adjust the apps time. I wouldn't worry about the actual time. you are going to eat during a 24 hour time. Midnight to midnight. So It doesn't matter if you log meal at 3am, 7pm and 11 pm (just examples) or that I log at 8 am, 12 pm and 6pm. While your meals can feel on two different days because you sleep between two of your meals. the calories you need to consume are the same.1

Totameafox is right: It doesn't matter . . . at least if you're not trying to use features in premium like the intermittent fasting timers.
If you wanted to, you could change the time zone in your profile to make it think your midnight was at a time you preferred.
The only difference I know of (other than the intermittent fasting one), might be that if your days vary (work week vs. weekend, say), and you use the "close diary" feature, its weight-change prediction would be goofy. Since that feature is not very accurate IME anyway, I have a hard time seeing that as a big deal. I never close my diary. It affects nothing else but the silly prediction.
If you find your eating patterns are uneven from day to day because of your schedule, and you're using the phone/tablet app, you could use the weekly average calories in the Nutrition menu as your guide, rather than focusing on the daily.
Is there something I'm missing, something you're finding that doesn't work for you if you simply record your food on the day you eat it, irrespective of time of day?
