Bacon and spinach pasta recipe
Here's a dinner favourite of mine:
75 g. of pasta, uncooked weight
1 tsp of olive oil (or 5 squirts of 1 cal spray oil)
50 g. of onion, chopped
1 clove of garlic
75 g. of mushrooms
2 balls of frozen spinach
3 rashers of lean bacon
1 pinch of mixed herbs
1 small tin of chopped tomatoes (227g)
1. Cook the pasta following package directions, omitting any suggested fat or salt.
3. Heat the olive oil in a pan and add the chopped onions, and crushed garlic and cook for a couple of minutes to soften. Add the sliced mushrooms, spinach, tomatoes and herbs and cook for 8-10 minutes.
4. Meantime, grill the bacon and then cut into bite-sized pieces.
5. Stir the cooked and drained pasta into the vegetable sauce and bacon pieces. Cook until heated through and serve.
I think this recipe is really tasty and it clocks in at around 670 cals. In the past I would have always used a Dolmio stir-in pasta sauce, but with chopped tomatoes and some garlic you really don't need it at all.

I don't know actually, I borrowed this recipe from somewhere else! I have got rid of that now, I never used the pasta water for anything. The canned tomatoes make a nice sauce with mixed with the onions and garlic.0 -
