I've made this for years with potatoes, onion, and carrots. What other veggies could I toss in with it? Thanks!

    I make mine with celery, green peppers and green beans, in addition to the carrots, onions and potatoes. You could also substitute sweet potatoes or butternut squash for white potatoes. At times, I omit the green beans and, instead, add green peas (especially if I'm adding carrots).
