The only way I do my perch is a quick saute. A little olive oil in the pan, salt and pepper the fillets and cook on a pretty high heat. I like a little bit of peach mango salsa on the side, you probably don't have that handy. I buy it at Costco and love it on all seafood. You can always just squeeze some lemon on it, or mix a little mayo wlemon juice and a bit of pickle relish and make a homemade tarter sauce.

I keep it *extremely* simple with my fillets. A slight sprinkle of adobo seasoning on each side. Toss it onto a hot pan that you coated with non-stick spray. While that's cooking, sprinkle the top side with 1/2 teaspoon of parmegan cheese. After a few minutes, flip. Sprinkle the other side with parmegan cheese. When it's done cooking in a few more minutes, give it a quick flip to melt the cheese onto the first side. Done! The adobo gives it great flavor (use only a little, though, you don't need much more, and it does contain salt) and the parmegan cheese crusts a bit for a great texture and flavor. Enjoy!

I just put a little lemon pepper on them and bake them in the oven with a little water
  • blackened seasoning and grated parmesean cheese (from the can) Love it! Careful with the seasoning it can get spicey quick. Learned that out the hard way.
