I am in search of a recipe large enough to feed 8 to 10. It needs to be an easy to transport, finger food type food. It is for a carry-in at work. We usually have the typical veggie tray, cheese tray, chips and desserts. I need something I won't have to feel guilty munching on during an 8 hour shift. Thanks in advance for any ideas!

    hummus and veggies (my personal fave)...

    Shake it up by grilling carrots and asparagus. Baked chicken tenders, cocktail shrimp.
    Flat bread spread with mixture of cream cheese and veggies (used ff cheese or soy cream cheese to cut calories. Roll it up and cut into small pinwheels

    I always make a lower fat/calorie taco dip for these occasions. Use ground turkey (93% lean), low-fat or fat-free sour cream and shredded cheese, and baked tortilla chips.

    Ham or turkey roll ups....EASY!

    Low fat low sodium ham or turkey slices
    Fat free or Light cream cheese
    Dill pickles

    Spread cream cheese on slice of lunchmeat and put pickle in the middle......roll up and refridgerate several rolls for an hour.....then take and slice up!!

    Just in case you were wondering about the whole recipe:

    - use 40% reduced sodium Old El Paso seasoning packet with 1 lb. ground turkey. I usually only use 1/2 the packet of seasoning.
    - once done, spread in serving dish. Let it cool a bit, then cover and place in fridge until cold.
    - spread a thick layer of sour cream over the ground turkey - cover and put back in fridge overnight.
    - in the morning, layer shredded lettuce over the sour cream. Drizzle taco sauce or salsa over the lettuce, then sprinkle with cheese.
    - options: sprinkle chopped tomatoes and/or olives on top of cheese.


    Done! Serve with the baked chips :)

    Thanks for all the suggestions!!! I don't know why I didn't think of the ham rolls! I have done those before with green onions. But typically have done salami so I knew that was out of the question!!! I would have put the taco dip out of the question too thinking it would be too much to pick at. Bad thing is with these carry-ins. None of us ever realize how much we are actually eating :(. I know I plan to have a breakfast to hold me over even if it is a high calorie one. Then I need to make sure I am drinking a glass of water everytime I go around the food. This will be my first carry in since starting MFP
