Check out Hungry Girl's recipes on food network. I did an alteration on one of hers the other day (using what I had):
2 large portobella mushrooms
3 cups shredded zucchini
5.3 oz container nonfat plain greek yogurt
1/2 c chopped green onions
1 tea. minced garlic
1 c. shredded cheese (can sub any kind, I used cheddar)
Take the stems out of the mushrooms and chop them up. Add to the zucchini. Add the yogurt, garlic, green onions, and cheese. Stuff the mushrooms with the zucchini mixture. I baked them, uncovered, for about an hour. They did lack a crunch and color, so you could put in some shredded carrots or something to help for that. I also seasoned with white pepper and ground mustard, so they were a little spicy.
Makes 2 servings: 184 cal, 20 g carb, 0 g fat, 29!! g protein. I was stuffed!0
