I’d love some recipes that DONT have cheese in them.

    That's extremely vague. I have about 120 cookbooks, and most recipes don't have cheese.

    I think I hear what you're saying, especially if you, like me, are in the US. It seems like a lot of the popular recipe sites drench nearly every dish in heaps of cheese. Don't get me wrong, I do like cheese myself, but it can be overdone, and it tends to be calorie dense.

    I don't have specific recipes to suggest, but do have a suggestion for how you could find some recipes. For side-dish type things, you could look at vegan recipe sites. They would use lots of veggies and grains, but not dairy in any form. Obviously, if you are an omnivore as I suspect, you'd need to look elsewhere for meat/fish recipes, but IME there are lots of simple ways of cooking those that don't involve adding cheese. There are also sites that focus on dairy-free recipes, for people who are dairy intolerant or who simply prefer not to eat dairy. Those would also be recipes without cheese. Also, some sites with Asian recipes will have quite a few without cheese, because dairy intolerance is more common in those places.

    It should be reasonably easy to find recipes in those categories with a simple web search, or a search on Pinterest if you use that app, just by putting in search terms like "vegan recipes", "dairy free recipes", "Asian recipes", etc.

    as someone who rarely eats cheese- you can omit cheese from ANY recipe.

    One of the best vegan mac and “cheese” I’ve had —omitted cheese entirely and used a puree of cashews, butternut squash, cauliflower, onions, nutritional yeast and garlic blended with pasta..

    Ok, lets try it differently: how good is your cooking? Do you have access to varied produce and spices? What kind of food do you like or would like to dive into?

    I usually look for a vegan recipe and add fish or chicken to it. As long as it doesnt have a ton of nuts or avocado, its an easy way to keep fat levels under control.

    I like egg white bites with spinach, onion, mushrooms in them.

    Roasted whole cauliflower.

    Better yet, roasted cauliflower & roasted garlic soup. Easy and delicious. No cheese.

    Arroz con frijoles. No queso.

    Side of short grain brown rice with a bunch of roasted asparagus. No cheese.

    Some things, like Mac & Cheese, are just going to have cheese. Don't make those recipes. Most recipes I make don't use cheese. I love cheese, but I rarely have it in the house, and I never use it in cooking. I do have some Flagship cheddar in the fridge now. Minor success story is I didn't eat the whole chunk when I opened it yesterday.
