Low calorie sweet desserts

need suggestions for low calorie dessert ideas. I don’t mean fruit or fruit salad. Really burnt out on fruits but have a huge sweet tooth.

    I make a low fat Basque burnt cheesecake which is crustless. You can use a lower temperature to make a low fat regular NY cheesecake with a graham cracker crust but the buttery crust adds a lot of calories.

    Google “burnt basque cheesecake” to see what it should look like and for instructions for lining the springform with baking paper. Ignore admonitions not to try a low fat version.

    For a 7 inch pan I whisk together 1 packet of low fat Philadelphia cream cheese, a little mote than an equal amount of no fat yoghurt, enough condensed milk to sweeten to taste, 2 tablespoons of flour a few drops of vanilla extract and two eggs. I airfry around 25 minutes at 200C.

    I make a low calorie creme brulee but you need a blowtorch for this recipe.

    Per serving it’s 150 ml milk (skim or 2% is fine), an egg, a tablespoon of Splenda or sugar to taste. Whisk everything together and add a pinch of salt and an optional drop of vanilla essence. Pour into small ramekins. I normally use 500ml of milk to 3 eggs.

    Google recipes if you want the classic au bain marie method of cooking in the oven. I cook 2 ramekins at a time in the microwave at the defrost setting in 10 minutes intervals. I use a meat thermometer to check degree of doneness. Eggs start to set at 70C but curdle into scrambled eggs at around 85C. If the mixture is around 80C but the custards are not set yet, let them cool in the microwave to 70C to 75C before giving them another blast in the microwave on the defrost setting. They can be a jiggly when you take them out as they continue to cook while they cool.

    Chill a couple of hours in the fridge. When you want to eat top each ramekin with a teaspoon of sugar and liquefy with a blow torch. Wait a minute for the sugar to harden to a thin caramel layer before serving.

    I made the low fat Basque burnt cheesecake today and should make some corrections on the recipe I wrote from memory.

    1. I use a 6 inch springform pan, not 7 inch.
    2. When filling the pan, place it in the air fryer first, then fill from a spouted meauring cup. Trying to lower a cake pan filled with liquid batter into the air fryer is a difficult accident prone task.
    3. I started baking at 200, but after 11 minutes the top was as brown as I wanted to take it. I covered it with a piece of foil and added a bit of silicon mesh to weigh the foil down so the fan didn't blow it off. I turned the temperature down to 150C cooked for 35 minutes all together.

    I buy 90 calories fudge smoothies bars from the freezer section at Costco. They’re a good size and make me feel like I really had dessert.

    I sometimes mix milk with cocoa (that is, the dry powdered chocolate used in baking) and sugar, sometimes adding vanilla and/or almond extract and/or cayenne (powdered/dried ground red pepper). I'm not going to give specific amounts, and you can choose the type of milk (full-fat, reduced, low-fat, skim; dairy/nondairy) that works for you, and obviously leave out any of the add-ins that don't appeal to you. I aim for a consistency similar to brownie batter — that is, much thicker than hot chocolate/hot cocoa for drinking, but thinner than pudding or custard. I don't like it especially sweet, and I can usually put together an amount that satisfies my chocolate craving for under 100 calories.

    Alternatively, you could just use an instant (powdered) hot chocolate mix and stir in some milk. I find most of them to be sweeter than I really want, and the calorie count for a similar amount might be 150 calories or more.

    Protein Banana Pudding:
    1 - 5.3 oz container of Oikos Triple Zero Vanilla Pudding
    1 tbsp of Zero Sugar Jello Banana Cream Powder
    1 tbsp Cool Whip
    Mix these together well.
    Add in 4 crushed Vanilla Wafers and refrigerate for 30 minutes or longer.
    I add another tbsp of Cool Whip on tip when I eat.
    Around 203 Calories, delicious, and filling!
