Black Beans & Quinoa

I found this recipe online and modified it slightly. It is delicious, and provides a flavorful base for salsa and guacamole.

  • 1 teaspoon avocado oil
  • 1/2 onion, chopped
  • 1 cloves garlic, chopped
  • ¾ cup quinoa
  • 1 ½ cups chicken broth
  • 1 teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • salt and ground black pepper to taste
  • 1/2 cup frozen corn kernels
  • 1 (15 ounce) cans black beans, rinsed and drained
  • ½ cup chopped fresh cilantro

Check the allrecipes.com site for cooking instructions, but they are "spot on." I was looking for something to eat with my homemade salsa instead of tortilla chips, and this was it.

    my big bean order of heirloom dried beans from Rancho Gordo is due in Tuesday.

    I’m excited. I never cared one way or the other for beans. They don’t actually excite me til I bought an expensive little bag of their black beans at my sweet balsamic vinegar shop.

    I was blown away. I’ve never tasted a “real” bean before.

    If you’re a bean fancier, see if they’ve got a local distributor you can try a small bag from. They rocked my world. I can’t wait to try them all.

    i just bought a bag of garbanzo beans.. but was looking for a recipe to use up some black beans and cilantro! 🌿

    I’ve got a pot of Rancho Gordo on right now. I’m going to top with some chopped smoked chicken I made yesterday, some shredded cheese, and some homemade avocado sauce, in corn tortillas.

    I’m so looking forward to dinner I don’t even care much about snacks today lol.
