Grilled Herb Chicken

4 - 4 oz Boneless Skinless Chicken Breasts-
Garlic - Minced finely, 3 cloves
Parsley - fresh, 3 tbsp finely chopped
Gwaltney - Bacon, 8 slices
Oregano, Fresh, 3 tsp finely chopped


Per Serving: Calories: 228 Carbs: 2 Fat: 9 Sodium: 352

Take garlic, parsley and oregano and mix to make a rubbing paste with it. Rub on chicken breast, meat side. Use two slices of bacon and wrap up the breast covering the rub. Use plain wood toothpicks to hold bacon on. (works best if you spray grate with non-stick spray) Grill, flipping every 2 minutes until chicken done. This was wonderful, one of my family's favorites including my younger one! You can use a reduced fat bacon if you would rather, or a turkey bacon. I have problems getting enough fat in so I sometimes treat myself to real bacon.

Can make the rub out of any spice mixture you would like.... the garlic is good to give it substance. I have made it with rosemary and tarragon as well.
