We have boneless chicken breasts thawing out for dinner, and I need ideas on what to make.
We also have on hand: onions, garlic, carrots, peas, corn, chicken stock, beef stock, edamame, soy sauce, oils, vinegars, rices, a potato, tons of different spices, nuts, half a tomato, cheese, steak sauces, etc, etc, etc. (I al already seeing a stir fry coming together in my head, but looking for something different than that).
Anyone have any good recipes or ideas?

I hate to sound lazy but Im a huge fan of the slow cooker...
I'd put in
onions, garlic, carrots, peas, corn, chicken stock edamame
let that cook until the chicken is perfect
then
serve it over the rice... or next to the potatos.
Drizzle a little soy sauce over if wanted (when using the rice)...

This is my very favorite chicken breast recipe. And it is so easy.
2 boneless skinless chicken breast halves
1 packet ranch dressing mix
2 TBSP olive oil
2 TBSP red wine vinegar
Put the mix, oil and vinegar an a resealable bag and mix. Add the chicken and work the marinade into the meat. Let this marinade for at least an hour. (overnight is best). Remove the chicken breast from the marinade and broil for 10 to 15 minutes, or no longer pink.
This makes 2 servings at 286 calories each.0 -
I would cut a pocket in the breasts, add the cheese, garlic, onion and some of the veggies in the pocket and bake it!0

I like to mix 1 part honey to 3 parts mustard for a homemade honey mustard sauce or I use Mrs Dash for chicken mixed with ground flax seed and garlic for a breading that sticks and is gluten free-pop them in the oven for 30-45 mins and ta-da! dinner is done -also my boyfriend like Italian dressing poured over chicken breast too ;-):smokin: :happy:0

I have a bunch of differnet Mrs. Dash seasonings so I usually just use those and switch them up! Another good seasoning that you wouldn't expect is Natural Sea Salt!0
