42 calorie Pumpkin Cookies!

I just made these cookies and they came out delicious!!! And the cookies are not the size of peanuts either....about 2 inches in diameter each : )
Here's the recipe:
Makes: 36 cookies @ 42 calories a piece
Ingredients:
2.5 c flour
1 tsp baking powder
1 tsp baing soda
2 tsp ground cinnamon
0.5 tsp ground nutmeg
0.5 tsp ground cloves
0.5 tsp salt
0.5 c butter softened (I used some low calorie Becel margarine)
1.5 c sugar (granulated Splenda for baking)
1 cup pumpkin puree
1 egg (.25 c egg substitute)
1 tsp vanilla
Directions:
1.Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
2.In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
3.Bake for 15 to 20 minutes in the preheated oven.
Afterwards I sifted some powdered sugar on top. Or you can make a glaze of some sort, but you'd need to add that to the ingredients to get accurate calories etc.
Luckily, I can bring these into school tomorrow and get rid of most of them....because having 36 of these around all the time would be verrrry tempting.

Honestly, I have no idea how altitude affects things like baking, so I couldn't say. Maybe you should start a new discussion thread about it. I'm sure there are plenty of people on here with a similar issue.0 -

Oh wow! Thanks for sharing! My grocery's bakery makes a white chocolate pumpkin cookie that I have learned I cannot have in the house they are so good. Can't wait to try yours for much less calories!!0
