So, I was doing very well for several months at the end of summer/beginning of fall of 2008. I was eating well and exercising almost daily. I had lost 25 lbs. Then the cold weather started in (no more walking outside), and my job increasingly became more stressful. Then I decided to start back to school in January. I am a singe mother who doesn't have the time to plan out and cook healthy meals so I was losing the weight on lower calorie snack food and microwave meals. That only tastes good for so long.
Well, here I am, I have gained 18 of the 25 lbs back. I am so disappointed in myself and I feel absolutely miserable. I would like any ideas for food. Remember I do not have the time to plan and cook healthy meals. How else can I eat more interesting meals? Any help would be great. I don't want to feel like this anymore!!!

I love buying rotisserie chickens from my grocer. I cut it up and put it in a ziplock. Buy it on sunday and take it to work for the week. Cut up veggies too. Have you also considered a protein shake for breakfast on the go? Fat free yoplait yogurt? They have awesome Boston Cream pie, Strawberry cheesecake, etc.Honestly... even if you just ate your calories even if they werent stellar choices.. you would still be at a maintance weight. I store things in my desk like Pudding, On the go water flavorers" (sp?) I always keep hummus from the grocers in my fridge along with the pretzel crisps... healthy and delish. No cooking just open and enjoy.

    Hope this helps! Good luck!:glasses:

Do you have time on Sundays? I usually use those days to cook brown rice for the week, make soups and kind of plan out what I will eat. I make sure that I have yogurt and cottage cheese in the house, apples and bananas and lowfat cheese. I have a very busy life, but I have to make it work. You lost 25 lbs, so you did it before, and you can do it again. My favorite meals to take to work is:

either 1/2 cup of nonfat plain greek style yogurt or cottage cheese
    1/2 apple sliced
    5-6 strawberries slices
    1 tbsp of honey

The next day when I want to eat I throw a handful of almonds on top and voila! It is high in protien, lowfat and it fills me up until dinner, usually through a workout. I make it the night before and it takes about 5 minutes.

You should get a George Foreman Grill and on Sundays (if you have time) cook up a couple of chicken breasts for the week alongside your brown rice. When your ready to eat, throw it all in the microwave with a handful of flash frozen green beans and you have an entire meal in 5 minutes.

I hope this helps and best of luck to you! You can do this...again:bigsmile:

I feel your pain with the job stress lady. It's a killer.

Yep, about all I can say is, I guess, that's why we like to say this is a change in lifestyle, it takes a while sometimes to make it the norm, but once it kicks in, you really never need to worry about gaining the weight back, because eating healthy and exercising on it's own will keep it off forever. I know that's easier said then done, but well... nobody ever said it was easy.:ohwell:

anyway, I hope you can succeed! I wish you the best.

You might try some protein, energy bars. Many of the bars are great for on the go and have a nice balance of protein, carbs and some fiber. You could use them as meal replacements or snacks.

We are here to support you and I sure hope you are able to start again and get back on track. It does feel good when we lose the weight but maintaining is really the hardest part as you already know. Best to get going again now as you'll at least be starting from a point that is better than the last time.

    Best of luck to you!

I do a protein shake in the morning and for lunches I do this. On Sunday I make hard boiled eggs. It is so easy to grab one and a piece of fruit, and string cheese to take on the go in my bag so when hunger strikes I have options. Also I try to eat whole food as often as poss. becuz they are healthiest. My fave lunch after my work out is 1/2 avocado, 1/2 small tomato cut up and string cheese cut up with 1T balsamic vinegar drizzled over it. It keeps me satisfied. You literally can make 2 lunches at once. Once you split the tom and avocado place them in their own ziploc with the cut up cheese. I recommend keeping the b- vinegar at work becuz it is best freshly drizzled. For dinners try buying STEAM FRESH BROWN RICE ea package is 2cups and so it is 1 c per evening so 2 dinners and you can pair with whatever you like. I also try to make enough of my main meal ie (low fat chili) so I have left overs for the next night or for lunch. I then can top my rice with the chili or whatever. Hope that helps.
  • Thank you to everyone who posted. I have been feeling really down lately and it really helps when you take time out of your day to write me. I did walk about 2 miles last night for the first time since fall. Although I am VERY sore today, I feel so much better. I will start cooking stuff on Sunday. I never even thought about that!!!
Once again, thanks for the suggestions and encouragement. It really means a lot!!!
