So I am looking for recipes that are fairly easy for a newbie vegetarian. Please send them my way (you can PM me, too!) P.S. I don't like mushrooms or tofu, so that should help with what reciopes to send me - LOL
Also a little OT but when I go to Subway's website and look at the calories for my sandwich and then compare it to MFP's database the Subway site is almost half the amount...I like that at subway.com I can create my sandwich the way I'll eat it and know exactly what the calorie count will be.

The major pitfalls of vegetarianism are too many carbs and too much cheese. That's what you will be getting at Subway.
Here are a few recipes from a blog I used to keep:

Ah yes, the famous Junk Food Vegitarians. Lucky me I am not one of those people. My carb intake is normal pretty much everyday and I NEVER!! get cheese on my Sandwiches (You can't taste those stupid squares anyway). I do like my cheese (always have), but I am aware of that so I watch it.0 -
I actually have a "quick" cook book. I'll look for a few recipes tonight and send them to you. I'm on my iPhone right now.0

I cook with lots of beans. Lots of protein, fiber and low in fat. I make beans and rice, soups, and chilies. Rice and beans with some salsa... perfect combo!
a few of my favorite recipes
http://allrecipes.com/Recipe/Addictive-Sweet-Potato-Burritos/Detail.aspx I don't use that much cheese in the recipe and I skip the soy sauce.
