Eggplant is soo good in many recipes. I also love slicing it and topping it with pizza toppings, VERY good!0 -

Sour Cream Chicken and Beef Enchiladas...yummmmmmm family recipe - to die for - extremely fattening lol. I only make them every couple of years.

Lately, I've been making banana bread and zucchinni bread. I use applesauce instead of oil!! It is sooo moist and delicious! If you use sweetened applesauce then make sure to cut back on your sugar. It cuts SOOOOO many calories. It's amazing!
