Hello,
Do you infuse your tea at the recommended temperature or water proportions? An Oolong tea should be infused at 80-85 degrees between 2 and 4 minutes depending on your taste and, if you're using loose leaf tea, one teaspoon per cup of water. Your tea should be a pale yellow-green colour. If the water is too hot, the leaves burn and the flavour is greatly altered. The recommendations for Pu erh are similar, but the taste can be pretty bad... however, after a dinner with lots of unhealthy fats, the virtues of pu erh compensate for the taste.
Good luck!0
