Banana Chocolate Chip Muffins
INGREDIENTS:
1 cup bananas, mashed (about 2 1/2 medium bananas)
1 large egg
1/2 cup applesauce
1 tbsp stevia or 1/2 cup splenda
1 cup whole wheat flour
1 cup regular flour
1/4 cup milk, 1%
1/4 tsp vanilla extract
2 tsp baking powder
3 tbsp semi-sweet mini chocolate chips
DIRECTIONS:
Mix all ingredients in large bowl. Fill 16 muffin tins or papers about halfway. (I used an ice cream scoop to spoon it because the dough will be thick.)
9X13 Pan also works
Bake 350 degrees for 20 mins.

For those who can't handle wheat, you can substitute rice and quinoa flour, add a bit of a nutty flavor too! Also, instead of Splenda, which sometimes gives a bad aftertaste, use stevia instead. Just saying...0
