taco meat recipe
I tend to cook on weekends and enjoy the leftovers through out the week at my convenience.
Ingredients -
2 lbs lean ground meat - I use 93/7 ground sirloin.
2 large poblano peppers diced
1 large red onion diced
1 garlic bulb chopped
1 bunch fresh cilantro chopped
1 large tomato diced
1 cup of chili powder
1 Tbsp of Cumin powder
Heat large cast iron skillet on medium to medium high heat.
Add the chopped onion. It can start cooking while you chop and dice the rest of the vegitables/fruit.
Add the rest of the vegitables/fruit and ground meat. Let it cook until there is plenty of liquid bubbling and the meat is browned.
Add the chili and cumin and stir well and turn down the heat to simmer.
It is ready when it is the desired consistency.
Yields six to eight servings based on your needs. I typically get six for the following per serving (calories 256, protein 31, carbs 8/ fiber 4/sugar 1, fat 11, 15 % daily iron).
Needless to say, it has much less sodium than commercial taco packets.
Serve it in a pita with avocado and spinach. Serve over rice and black beans. Serve it however else you may like.
Enjoy.
