Salad ideas?

I only eat salads in the evenings as im not hungry and prefer to eat high kcal things during the day were i can burn them off.
My usual salad consists of lettuce red pepper and cucumber with olive oil and lemon as a dressing with some salt.

But im getting so tired of it !

Any fun ways to 'dress up' a salad?

    fruit! I love strawberries in my salad. Feta cheese, Craisins (so delicious!) you can add just about anything!
  • artichokes, grilled red pepper, shrimp, ham, garlic and herb feta, bacon bites :)

    i like to put cold broccoli, and cauliflower in mine. Just about any leftovers. What about hard boiled eggs. I have been using hummus as dressing. Also plain yogert.
  • i load mine down with vegetables: tomatoes, cucumbers, broccoli, cauliflower, peppers
    depending on my calorie intake for the day...if i'm good on calories i add in: kroger salad toppers (cranberry and almond) mccormicks salad toppings, kroger tortilla strips, bacon bits and some cheese
    i've recently gotten to like kroger lite balsamic vingeratte (sp?) since its low in calories and sodium, but sometimes you just gotta change up the dressing as well so you don't get bored

    Grill some bacon until crispy and dice it up with some feta cheese and mix in with raw spinach.
  • feta cheese is a great way to spice up a salad. and using different resipes for dressing. put balsamic viniger in your salad dressing and salt and pepper.
    olives, mushrooms, fruits, tomatoes and different kinds of lettuce help too. you can try arugula or red leafed lettuce.
    also, having a bowl of soup might switch stuff up. soup is super low cal and delicious! ( I go for chicken noodle. usually 100-90 cals a serving.)

    Beans, apple, tuna, beets, feta, quinoa, cherry tomatoes. I like to make a huge pile of things, but lately its been black beans, cheese, salsa, lettuce, cilantro and lite sour cream.

    Oh wow i feel super inspired ! Im a vegetarian btw , bit stupid of me to not have said that :)
    Im sure i can find an alternative to the bacon !

    I make a turkish chopped salad. It also lasts for days so you can make it ahead of time. This looks like a good recipe, but i skip the cheese:

    Plus when they are available I buy the edible flowers. Makes it look pretty. :wink: Raspberry vinaigrette makes it tastier. Mandarin orange slices, pineapple, baby spinach leaves, fresh mozzarella, fresh herbs. Grilled chicken, ham or the little shrimp.

    I too love salads...the combinations are almost endless! Here are some ideas, just to name a few:
    chicken,fish or any lean meat (I like mine warm)
    A small amount of cheese. I love feta
    Use different lettuces and salad greens I love the herb mixes.
    Kalamata olives
    green olives
    artichoke hearts
    palm hearts
    sugar snap peas
    snow peas
    chick peas
    kidney beans
    black beans
    any bean you like
    lightly steamed green beans
    a few nuts
    fresh mushrooms
    onions
    fresh fruit
    Craisins
    raisins
    You can make delicious dressings from orange, lemon or lime juice and all kinds of vinegars with a little oil. Add seasonings and fresh herbs to your taste.
    As long as you measure and keep track you can make a wonderful meal with a salad:smile:
