Chicken Salad with Roasted Peppers

2 C. chopped cooked chicken breast (about 3/4 pound)
1/2 C. refrigerated prechopped green bell peppers
1/2 C refrigerated prediced celery
1/2 C. dried cranberries
1/2 C.chopped bottled roasted red bell peppers
1/4 C. refrigerated prechopped red onion
1/4 C. chopped pecans, toasted
1/4 C. light mayonnaise
2 tsp. lower-sodium soy sauce
1/4 tsp. crushed red pepper

Combine all ingredients in a medium bowl; toss well. Cover and chill until ready to serve
Serving size is 1 cup and this make 4 servings.

Calories: 280......Fat: 13 gm.......Protein: 23gm......Carb: 17.5......Fiber: 2.3gm......Chol: 65mg.......Iron: 11mg.......Sodium 333mg.

This is really good and most of it can be prepared ahead of time. From Cooking Light Enjoy!!
