chessy broccoli potato mash

This is a great weeknight side dish recipe adopted from eatingwell.com

Ingredients:

1 lb yukon gold potatoes, cut into chunks
1 bag frozen, chopped broccoli (3 cups. steamed broccoli florets can be substituted)
1/2 cup skim milk, warmed
2/3 cup fontina cheese, shredded
1/2 t garlic salt
ground black pepper to taste

Directions: place potato chunks into a pot of boiling water and boil until easily pierced with a fork (about 10 minutes depending on the size of your chunks) In the meantime, place the broccoli in a large microwave safe bowl, and microwave on frozen vegetable setting or about 2 minutes. Once potatoes are boiled soft, strain them, and add the potato chunks to the bowl of broccoli. While still hot, use a potato masher to mash the potatoes and broccoli together. Add the milk, cheese, salt, and pepper and continue to mash. Serve immediately.

Time: 25 minutes. Makes 6 servings. Serving size: about 2/3 cup Calories: about 135
