Easy Beef Pot Pie

I came up with this recipe b/c its quick and easy on busy days! Also, can easily be made with chicken or turkey instead of beef.
1 pre-made refrigerated pie crust
8 oz cut up stew beef
1 bag frozen stew vegetables (carrots, potatoes, onions, celery), thawed
1 cup frozen peas, thawed
1/2 cup beef gravy
1/4 cup plain, nonfat greek yogurt
Mrs. Dash Table Blend Seasoning
Preheat oven to 400.
In a medium sized skillet, cook beef until tender (simmering in water until it cooks out makes the meat really tender). Add veggies when beef is cooked through.
In a small bowl combine gravy, yogurt and seasoning to taste, add to beef and veggie mixture.
Lay one crust down in a pie pan or 2 quart dish. Add beef mixture and top with second crust. Seal or fold over edges of crust and cut a few slits in top. Wrap edges of crust in foil to prevent burning.
Cook in oven for 20 min, remove foil and cook for an additional 15 min.
Makes 8 servings.

Calories 321, Carbs 34, Fat 16, Protein 13, Fiber 1, Sodium 404
Can reduce calories by 100/serving by omitting bottom crust.
