 ‎Baked Sweet Potato with caramelized brown sugar and marshmallows 284 calories per serving:smile: .

Take a 1 large 4 inch diameter/ 10 inches long Sweet Potato, poke holes in it with a fork, and put it in a fairy high quality baggy. Microwave for 8 minutes or until fork tender. Carefully cut the potato into 2 portions and place 1 tbsp. I cant believe its not butter light to each. Add 1/8 of a cup of brown sugar to each. Add 30 mini marshmallows to each. Baked or broil until the marshmallows are golden brown. Enjoy!

 Mashed Sweet Potatoes: 262 Calories:smile:

2 large Sweet potatoes (enough for 4 cups mashed), 2 Tbsp of butter, 1/4 cup brown sugar, salt to taste. Boil the sweet potatoes. Meanwhile add the butter and brown sugar into the food processor. Once the sweet potatoes are cooked, drain them and add them to the food processor. Pulse them until there are no lumps left. Add salt to taste. A 3/4 cup serving is 262 calories and really helps with the sweet tooth.

I should learn to read your recipe posts when I'm at home and can cook them, instead of in the morning when I'm stuck at work haha ;)

So....The Jamaican chicken thing I cooked last night wasn't bad but I wont make it again. It was super salty so I am not going to recommend it to you guys. The orzo salad..meh. I don't think I like lemon or fresh parsley on orzo. Rather, I would add some fresh garlic, red bell pepper, salt and pepper. Maybe like a teaspoon of olive oil to break up the starch.

However the pineapple/cucumber salsa wasn't bad at all. The lime and honey really tied the flavors together.(excluding the mint)
    1 tablespoon honey
    1 tablespoon lime juice
    1 cup finely diced pineapple
1/3 cup finely diced, seeded English cucumber
1 tablespoon chopped fresh mint leaves (optional) but I didn't like it so I excluded it from mine

When trying new recipes you win some you lose some. :) I am having Asian lettuce wraps again tonight so it makes up for last nights dinner. YUM.

For those who didn't see the lettuce wrap recipe on my other recipes post, here it is:
(Mind you they are very flavorful and a little spicy so if you like milder food this might be too strong for you)

    Another recipe:

    Grandmothers Cabbage Casserole

1 Medium Cabbage chopped and rinsed
    1 lb Ground beef
    1 Can of onion soup
    1 can rotel tomatoes
    2 cans tomato sauce
    1 cup raw rice
    2 eggs well beaten
    ½ cup cooking oil
    1 large onion chopped
    1 bell pepper finely chopped
    salt pepper to taste
    Bread crumbs (to top) optional
    Cheddar cheese (to top) optional

Mix all the ingredients together by hand. Add the mixture to a greased 13x9 deep baking pan. Sprinkle with bread crumbs. Bake at 325 degrees for for 2 hours. Add grated cheese and melt on top. Enjoy.

If my calculations are correct, it has 352 calories for 1/6th of a pan.
