pepper recipes!

right i have a massive bag of peppers ooppss!

any recipes? i already know about stirfrys and stuffed peppers of course xx

    Roast them and add them to salsa or make a soup.

    This is simple and can be enjoyed on any diet whether it is vegetarian or low carb.

    Olive Oil to coat pan
    1 cup chopped Red Bell Pepper
    8 oz Sliced Mushrooms
    2 cloves Garlic
    1 T Dried Thyme or 1 T Fresh Thyme
    2 T Dry White Wine or Chicken Stock

    Heat oil in pan on medium-high. Add mushrooms. Cook until they begin to brown and add the peppers. Cook for 2-3 minutes, and then add salt, pepper, garlic and herbs. Cook for 30 seconds and add the wine or stock. Cook until the liquid evaporates.

    Also, you can never go wrong with kabobs because you can use any color bell pepper along with onion and meat for a delicious dinner and left overs!
