Mediterrenean Chicken
I found this recipe on a website for crockpot recipes. I am making it for dinner tonight and will tell everyone how it went.
A variety of Mediterranean vegetables and seasonings adds flavor to these easy boneless chicken breasts. Serve this chicken with rice or angel hair pasta for a fabulous everyday meal.
Yield: Serves 6
Ingredients:
•6 skinless and boneless chicken breasts
• 1 large can tomato sauce
•1 small can tomato puree
•1 can sliced mushrooms
•1 can ripe olives, sliced or whole
•1 tablespoon garlic
•1 tablespoon lemon juice
•1 teaspoon oregano
•1 onion, chopped
•1/2 cup dry white wine, optional
•hot cooked rice
Preparation:
Wash chicken and pat dry. Combine all ingredients in the slow cooker except the rice. Cover and cook on low for 6 to 8 hours. Serve chicken and sauce over rice.
Serves 6.

Well, I ended up getting store brand tomato sauce and they didn't have the low sodium version for the same price. And neither did the name brand the store sold. The store brand actually had less sodium than "Hunt's". Go figure. LOL. Thanks for the tip though.... I also think that you have to watch your sodium the rest of the day.
Also, the calories and other nutritional information doesn't account for the rice... because it is dependant on what you are in the mood for. So the nutritional value is for the chicken, veggies and sauce only.0 -
