Eggs for lunch...pre-made to take with me?

Hiya peeps,

Got some leftover canned tuna and was thinking about putting it into an omlette to have at work for lunch tomorrow. Prob throw in some mushrooms and spinach and a tiny bit of cheese.

Is it ok to make this night before, refridgerate and microwave tomorrow? Trying to have a filling low carb/high protein lunch!

    I know what you mean. I will make the whole thing the night before and literally reheat it?!

    I'm picky and hate most things reheated, but I do know that you can premake an omelette and reheat it. I work in customer service and have to order meals ahead for some customers and they've never had a problem reheating and eating their omelettes.

    Sounds OK to me...I've taken omelets home from restaurants before and had them the next day. If you're worried about it tho, another option would be to make a tuna salad with the veggies you were going to use and eat the eggs boiled instead on the side.

    It's got to be better than the food they serve in my school canteen where i work!

    I've done this, too. It's not excellent, but it works.

    Boil the eggs and make some tuna salad instead. You can still throw the spinach and mushrooms in there. Cube the cheese and have it on the side w/some veggies...same meal. Just put together differently. And you don't need to heat it up.

    Decided to go for something completely different....threw veggies, left over tuna and a couple of tablespoons of rice in a wok, stir fried with soy sauce, chilli flakes, garlic and worcester sauce...i'm actually looking forward to this now!!!!

    Not big on reheated eggs, but if you go for scrambled eggs (instead of an omelet) you can cook them in the microwave.

    Quiche...no problem. But a reheated tuna omelette just doesn't sound appealing...at least to me anyway.
  • If you heat them too much, they'll get rubbery...gross. So, your best bet is to not cook them all the way, so when you reheat, no chewy mess! I do this all the time, love it!!
