Pumpkin Chocolate Chip Muffins
I have a great recipe for Pumpkin Chocolate chip muffins that I tweaked to make a lot healthier
Delicious and guilt free!
4 eggs
1 cup Spelnda (original recipe calls for 2 cups of sugar)
1 (16 ounce) can pumpkin
1 teaspoon vanilla extract
5 individual cups of unsweetened applesauce (original recipe calls for 1.5 cups of oil)
3 cups soft whole wheat flour (original calls for white)
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
2 cups of chocolate chips (these are optional, they taste great with or without)
Directions:
In large mixing bowl beat eggs, spelnda, pumpkin, vanilla and oil until smooth.
Mix dry ingredients together and mix into pumpkin mixture.
Fold in chocolate chips
Fill greased or paper-lined muffin cups 3/4 full.
Bake at 400 F for 16-20 minutes.

Yum, but with all my baking stuff, I would be some all natural peanut butter in them. There is also an egg subisitute as well that I just got yesterday that I now have a reason to use it0
