Baked Potatoe- good or bad for ya?

Hi,
I live in Idaho....the Famous Potato state...so of course I'am a little bias about potatoes!! LOL I think baked potatoes themselves are good for you but all the toppings are not! I like to use I Can't Believe It's Not Butter spray or light sour cream and salso. Potatoes are high in potassium, B6, and vitamin C...plus many others and don't forget to eat the skin, it has alot of nutrients it is also!

I always eat the skin of the potato and I love love to eat uncooked potatoes skin and all. I usually peel the potato then eat the skin. I am just a potato finatic.0

...And if you bake them you can substitute Greek yogurt in for sour cream.
You are the second person today to mention the yogurt/sour cream substitution. I'm going to have to try this!
Yep...the non-fat greek yogurt is the best! You are getting protein at the same time! Use it to make veggie dips too...awesome!0 -
