Pickle chicken

Hi all,
I looked into the fridge yesterday to find something to marinate chicken and noticed that there were 3 pickle jars in there with only 1 pickle each (yes my family is like that -- grrrr)
So I wondered if I could use the pickle juice in some way. I looked it up online and found "Pickle chicken". Sounds weird, but it was easy and good.
Marinate chicken breasts in pickle juice for 3 - 24 hours (I just did 3)
Discard marinade
Season breasts with pepper blend spice (or whatever you have)
Grill
It was very good --didn't have a "pickly" flavor, but was tangy and moist (don't overcook).
Kids all wanted seconds!
160 cals for 4 oz. (pickle juice has 0 calories).

Sounds great! Brining poultry makes it taste so much better and I never would have thought about the pickle juice but it makes sense. Thanks for the recipe!0

All vinegars are great to marinated as they help to tenderize and moisturize the meat! I use as a flavor splash when saute fish and such, a little goes a long way and is "free"0
