Vegetarian: What to put in my pita?

Anyone have any cool and unique ideas? I don't eat meat...but I'm NOT vegan so I will DEF. eat cheese lol!

Thinkin' about having one for lunch today...but I want to try something new and different.

    Egg salad is one of my faves. Also, left over roasted veggies with some feta. Super yummy!

    Roasted red peppers, baby spinach, hummus, and a sprinkling of feta. Yum :D

    Just a bunch of roasted veggies in one tastes good. Or you can do hummus with veggies.

    Hummus with diced/sliced red peppers, purple onions, lettuce & tomato with a little spicey red pepper relish. You could also add a slice of cheese.

    Chickpeas, chopped bell pepper, onion, maybe try some eggplant, olives, banana peppersnif u like spice, avacado, salsa, sour cream or greek yogurt.

    Leftover chili or lentil soup with whatever lettuce, cheese, olives, etc... you like. Actually any leftovers that are thick enough can be used.
  • I love grilled halloumi cheese with grilled veggies (peppers, cherry tomatoes and courgettes) with just a tiny amount of pesto - delicious

    I would say bell pepper, onion, cucumber, cheese, some dressing, avocado, tomato, lettuce, I often make a salad and stuff it in the pita!

    Get your protein boost by adding quinoa and black beans, with some diced tomatoes, cucumbers, red onions and feta cheese. Sprinkle a little bit of balsamic vinegar (not viniagrette) over it, and you have yourself a pretty delish meal!

    How about a spinach strawberry salad in a pita pocket? Ingredients: fresh spinach, strawberries, slivered almonds feta cheese and poppyseed dressing? I make that salad a lot and love it! I may have to try it in a pita myself.:wink:

    Chopped avocado, tomatoes, cucumber, onions, and bell pepper. Mix together with lime juice and mmm mmm good!

    Hummus and pickled grilled veggies. SO good.
    To pickle the veggies, (onions and peppers), cut them into big slabs and simmer on the stove in balsamic vinegar until soft. Then grill in a grill pan. Sounds worky but it's worth it!

    Hummus: Can of chick peas, 2 tablespoons of tahini paste, clove of garlic, olive oil in the food processor. Process until the right consistency. Add roasted red peppers if you care to.

    Good with swiss cheese.
