Week 3 is here! Let's keep it moving.
This week the goal of minutes to exercise has jumped greatly. 400 minutes this week!
Also water has increased to 10 cups instead of 8 this week!
Let's MOVE IT MOVE IT!

Wow! Ok, 400 minutes will definitely be a challenge for me I'm glad I've gotten off to a good start and have 60 minutes logged already. :drinker: I also canned some hot peppers today (I love cooking with hot peppers :smokin:) and made some homemade apple cider (the house smells aMAZing!!). Let's have an awesome week!

OK thats heaps of exercise I will try............maybe if I do 2 workouts a day I can do it! And I'll try on the water, I have been happy to get to 8 glasses everyday since this challenge has started. Does Monday count for the 10 glasses? Because by the time you posted the message it was already Tuesday in Korea so I didn't know???0

It's just over 1 hr of exercise for 6 days. I noticed a lot of you were in the upper 300's lately this is to push you all!0

Hey all - I'm keen but I'm not sure if I can commit to 400mins but that's why it's a challenge right???? Not being able to do cardio really sucks balls! :laugh: :laugh: :laugh:
I'm in the last leg of my uni semester and it's KILLING ME but then again I've been saying that for what seems to be forever and I'm still breathing so maybe I should just chill with the dramatisation
I managed to crawl into bed this morn just after 1 and was up again just after 6:30. Have been trying to find workouts that I can do without the use of my legs and have been lucky.
Yesterday was sucky too with food but all good - am back in the game today and now I have to get my *kitten* into gear.

woohoo week 3!!! Being Monday I started out with my weigh in. My scale hasn't moved in three weeks! yeah yeah I lost 3.25 inches but I wanna see a number! I got my number today! dropped from 201.0 to 199.0! Tomorrow I am completing my first official 5K! It's a great week!0

I found a really helpful recipe for rescuing freezer burnt chicken breasts and wanted to share it with you. I ran across some chicken breasts in my freezer that were inadvertenly left open a bit. I tried this recipe with half of what was left and it was fantastic! I am doing the other half as I type. ;-)
Freezer Burnt Chicken Breasts Rescue - Shredded Mexican

The plan: 1) Simmer in chicken broth with some spices and onion for an hour. I brought it to a boil in a large dutch oven then move to a preheated 300 degree oven with a tight lid. I did not trim any fat since it may help moisturize things. 2) Shred by hand so I could feel the texture and get rid any tough areas... There were none. 3) After rehydration and shredding, spice it up well to cover any taste issues... I don't think there was any. Results 8.8 Taste 9.2 texture 8.8 work 8.5 Notes: Amazingly good especially considering I would have tossed this.
Ingredients
Step 1
5 thawed freezer burnt skinless boneless chicken breast
2-14 oz cans 14 oz cans chicken broth
2 medium onions, chopped medium
1 T crushed garlic
1 t cumin
1 t salt
Step 2
15 oz can tomato sauce
2 T chili powder
1 t black pepper
1 t cumin
1/2 t cayenne pepper
1 cup broth from step one
most of the onion from step one
Instructions
1) Preheat oven to 300 convection
2) Chop onions. Add onion, 2 cans chicken broth,1 T crushed garlic, 1 t cumin, and 1 t salt to Dutch oven over high heat. Mix well, add chicken and bring to boil.
3) Cover with lid and move to over for 1 hour.
4) Remove from oven and move breast to plate to cool for 15 minutes then shred by hand. Move broth to a separate container.
5) Add chicken and all of part two ingredients back into Dutch oven and bring to boil. Reduce heat to low and simmer for 15-20 minutes.
6) Remove from heat and use in burritos, enchiladas, etc.

Prep time: 10 mins
Cook time: 1 hour 40 mins
Total time: 1 hour 50 mins

I've introduced the site to 4 people this month alone! My sister, bro-in-law, best friend and her cousin! I miss working out on Tuesday, had to go from work directly to Toronto (about 20 mins away from where I live) and see a free secret movie screening, didn't get back to my condo until well past 11. Going to have to try really hard today and tomorrow to make it to 400 minutes!0

LOL some reason I told myself it was 500 minutes, I'm at 390 for the week. That is with 3 good days of work out and 2 bad ones. I should hit about 550-560 minutes this week though! BURN IT PEOPLE! MONTHS END IS JUST AROUND THE CORNER!0

My customers come into work and are amazed at my transformation. When they ask how I tell them about this site! Had a table of 10 all download the app last night while they waited on dinner! I have my minutes in for the week and have grown gills with all the water!0

Okay want peoples opinions on challenges. I've been a horrible leader, I just haven't been able to get into the spirit of things this month. I've been pushing myself but I've found myself with too many other distractions.. surgery, then two business trips, new job, and house hunting it's been killer. I apologize to those expecting a cool challenge. I feel I have failed you guys there. I did learn from this next time I do a challenge in a couple months Im going to have everything planned out the whole month ahead. Videos, pictures, and everything.. Flying by the seat of your pants is too hard...
Anyways For this week... Challenge is a CHOICE..
You can pair up with someone on our team and you have to burn 7000 calories for the week between both of you. (It can be split any way you want.. 60/40 or etc..)or you have to burn 4000 calories by yourself for the week!0 -
