need a quick dinner idea for under 350 calories

I am stuck on campus for dinner. My options are very limited. Either a sandwich from the coffee shop or I can run to the grocery store for something very fast, but preferably not microwavable. Anyone have any suggestions? I only have a 25 min break.

  • Unfortunately there isn't a salad bar, but there is a subway not too far. They are having that $5 deal...

    If the grocery store has a deli I would get a bit of roasted turkey breast, maybe a slice of light havarti and a nice small grainy bun, then get a small container of dijon. Top it off with a small bag of baby carrots and you should be within those calories.

    I would recommend Subway too and healthy :flowerforyou: Do not work to hard tonight.
  • This is a little more than 350 calories, but it's quick and really good. It's also super good the next day, cold.

    Black Bean & Toasted Corn Tacos
    courtsey vegetarian times may/june 2010

    1 cup cooked black beans (if using a can, drain & rinse)
    1/2 cup prepared salsa
    2 cloves garlic, minced (2tsp)
    2 1/2 tsp ground cumin, divided
    1 cup fresh or frozen corn kernels, (thawed if frozen)
    1/4 tsp ground black pepper
    4 6-inch corn tortillas
    12 baby spinach leaves
    1/2 cup jarred roasted red pepper strips
    1/4 cup coarsely chopped cilantro or parsley
    2 small green onions, finely chopped (1/4 cup)
    1/4 cup crumbled cotija or feta cheese, optional


    1. Bring beans, salsa, garlic, and 1 tsp cumin to a simmer in a saucepan. Reduce heat to medium low, and cook 5 to 6 minutes, or until soft. Remove from heat, and mash with fork to crush beans for creamier filling, if desired.
    2. Heat skillet over medium-high heat, and coat with olive oil cooking spray. Wrap corn in paper towels, and squeeze out excess water. Add corn to skillet in single layer, and sprinkle with remaining 1 1/2 tsp cumin, black pepper, and cayenne pepper to taste. Cook 5 to 10 minutes, or until golden and crispy, stirring frequently. Note: in the summer months, I use fresh corn, grilled and sprinkled with the seasonings after.
    3. Preheat oven or toaster-oven to 350F. Toast tortillas in toaster oven 1 minute to soften. Alternately, bake tortillas on taco baking rack in oven 7 to 10 minutes, or until crisp. Fill each tortilla with 1/4 cup beans, 1/4 cup corn, 3 spinach leaves, red pepper strips, cilantro (or parsley) and green onions. Top each taco with 1 Tbs cheese, if using. Serve immediately, or pack into lunch container and chill. (These are AWESOME cold)

    Nutrition for 2 tacos: 362 cal, 14g protein, 4g total fat (<1g sat fat), 74g carb, 0mg chol, 904mg sod, 14g fiber, 9g sugar

    Last week on biggest loser there was a stuffed pepper recipe where a whole pepper is only like 250 calories. I tried it...pretty tasty and filling. The recipe is posted on the biggest loser website.

    if you are near a quick trip, their turkey sandwiches are like 290 calories. get a fruit cup to go with it.
  • I dont have anyway to make/measure everything for the tacos tonight but omg those sound good for tomorrow!
  • Tuna fish is sold in grocery stores comes in nice packets that are about 80 calories. I use a little mustard to mix it up and that's a quick stack or starter. Put that right onto a bun/wrap/roll bought there and you're set. You can also buy a bag of lettuce or greens to put it over. Should keep you pretty low on calories. I usually eat the tuna plain, maybe two packets would fill you?

    Subway is misleading, make sure you order the 6" and check the calories too. None of their footlong sandwiches come in under 350 calories, I don't think many of their 6" do either.
  • You are right i hadn't thought about that but they are usually over 350 calories even for the 6 inch.

    Yeah I'd do subway. A lot of sandwiches are under 350 when you ignore the cheese.
