Muffins

I am running low on stuff but my three year old wants to make muffins. Anyone have a lower calorie muffin I can make with her? I dont have any brown sugar, fresh fruit ( just ran out) I dont have any apple sauce either. If not a muffin ( she was watching Max and Ruby) Maybe something else. I do have pumpkin and stuff on hand.

i took a vanilla sugar free cake mix , 1 cup of water, 1 cup of 100 % pure pumpkin and 2 tsp of pumpkin spice, mix and bake . makes 12 servings.

pumpkin protein muffin (i make them all the time at home)
spray a small bowl w/ nonstick spray
use 1-2 tbsp of whole wheat flour
2 egg whites
1/4 cup of pumpkin
1 tsp of sugar (brown preferrably or stevia)
1 tbsp chocolate protein powder
1/4 tsp baking powder
whisk all ingredients together in bowl, then microwave 2-4 minutes

Ingredients
1/2 cup pumpkin
1/3 cup brown sugar
2 tbsp oil
1 egg, beaten
1/2 cup grated carrots
3/4 cup whole wheat flour
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp baking soda
1 tsp baking powder
Directions
Beat together pumpkin, brown sugar, oil and egg.
Add in carrots.
In a separate bowl, blend together flour, salt, soda, baking powder and cinnamon.
Add to the pumpkin mixture.
Fill muffin tins about 2/3 full.
Bake at 375 degrees for 10-14 minutes. Makes 6 muffins.

If you have a cake mix and a can of pumpkin, mix them together and bake as directed for cupcakes (18) Fabulous with chocolate, spice or red velvet cake!!0 -

Hungry girl chocolate pumpkin muffins-
1 can of pumpkin and 1 box of devils food chocolate cake mix and nothing else.
Mix together, put mixture into 12 ct muffin pan and bake for 20 min at 400 degrees.

This was kind of a run off of hungry girls chocolate pumpkin brownie muffins.
Ingredients
1 Box Angel Food Cake Mix
1 15 oz can Pumpkin (purred pumpkin not pumpkin pie filling)
1 tsp nut meg
1 tsp cinnamon
6 tbsp white chocolate chips
Pre-heat oven to 375
1) Combine Cake mix, spices and pumpkin a bowl. Mix with electric mixer until smooth. (mix will start to puff up if you just leave it out, so don't let it sit to long).
2) Add chocolate chips, mix in with a spoon or spatula.
3) Spray Muffin/Cupcake tin with non-stick spray, and evenly destitute batter.
4) Bake for 20 minutes, or until you can poke a tooth pick in the middle and it comes out clean.
Makes 12 Full sized muffins.
Per serving (1 muffin)
Calories: 187 Carbs: 39 Fiber: 2 Fat: 2 Protein: 3 Sugar: 29 Sodium: 317

I made these today, they are wonderful! I used muffin liners, the muffins stuck to the liners a little, and I added a few more chocolate chips.0 -

You might already know this but if you coat ur chips in a little flour they wont all sink nd it helps to keep them from stickin also.
