Suggestions for non refridgerated food on trips?

I have been going on the road with my husband 3-4 days out of each month since he started his new job. We have been 2 times so far and so far both times have been a disaster on food.

Apparently when all you do is drive (we are in a semi) all you think about is food... eep!!

So, I have been racking my brain on a solution and last time, the whole bringing tiny boxes of cereal and getting milk each mornig where we stopped works fine for breakfast... and the 100 calorie snacks work wonders between lunch and dinner, but lunch and dinner have been a nightmare.

Part of the problem is he can't stop right away, we are in the middle of nowhere and by the time we find a place to eat it's like 3-5 pm for lunch and I"m starving and eat whatever I see. So I had the bright idea just now to bring our own lunch and then it doesn't matter where we stop to eat, even if it's while going down the road. And dinner isn't to much of a problem, because we stop everytime at a truck stop, so I can find something healthy there.

So lunch.. what to do for lunch, I debated buying a plug in cooler, until I seen the price :( We can't afford one... so I looked at peanut butter and jelly sandwiches, which may or may not work, because jelly needs refridgerated and the packets cost $18 for 200, which isn't bad but I read they only stay good a month... since we only go out once a month that'd be alot of money for a couple of sandwiches (his company buys food while on the road for him, so anything we take is extra out of our pocket, they don't buy that.. so I won't save money by NOT eating out). I am going to continue to look for packets at stores that come in smaller packages than 200, but I think I might get sick of P & J after awhile, so here I am...

Any ideas on what I can take that is a nice filling lunch (around 500 or less calories) that doesn't need refridgerated and can survive being sitting on a shelf for 1-4 days? (Banana's for example wouldn't make it to day 4).

I was thinking sandwichy, since I found some nice yummy bread that was very low calories, but anything really... Suggestions would be amazing, maybe you guys can come up with something I missed! Thanks :)

Also, there's nowhere to cook anything, if I have to say that, lol, since we'll be in the middle of nowhere while eating it. I figure that's self explanatory, but /shrug :)

EDIT: And if anyone knows of any kind of healthier drinks that taste decent hot and don't need refridgerated, that would be awesome to.

    I eat a peanut butter sandwich (on Sara Lee 45 calories and delicious bread) and an apple for lunch every day. It tides me over very well, and doesn't need refridgeration. I'm not a very adventurous food person. :wink:

    Hard Boiled eggs, Laughing Cow Cheese Wedges, Almonds, Walnuts...... Ryvita, tomatoes, Jar of low fat mayo.... Beef Jerky are all things that I pack when I go on a road trip :-)

    Also some good quality Protein Bars like the Adkins Advantage Range....

    Also - you are saying bananas won't last by day 4 - surely you can pick up fresh ones at the truck stop every few days??
