I know that optimally you should not have more than 1 tsp of salt a day. Unless you are working out a lot, because you sweat it out and even then you wouldn't need to increase very much. You should also stick to iodized sea salt as it has many useful minerals in it. Reducing salt also reduces your risk of a stroke. As for fat and saturated fat, I think it's more important where those fats are coming from, if you are eating dairy or animal fats you should keep them to an absolute minimum. If they are healthier fats you can eat far more of them ie: olive oil, cold pressed veg oils (soy, sunflower, canola, hemp, flax etc.) unhydrogenated margarines, avocados, nuts and seeds. Even coconut oil and cocoa butter are better for you than any animal or dairy fat.
