I love baking with pumpkin because it really cuts calories one of these cookies is only 120 cals, 6 g fat, 17 g carbs, 10 g sugar and you can also substitute the oil for applesauce for even less cals
I just made them and they are abolutely delicious and they are more like a cake consistency! YUMMY!
1 cup pumpkin
1 egg
1/2 cup any kind vegetable oil
1 cup sugar
2 tsp. baking powder
2 cups all purpose flour
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda
1 tsp. milk
1 tsp. vanilla
1 cup white chocolate or butterscotch chips
1/2 cup walnuts or pecans, chopped
Preheat oven to 370°F.
Note: If using butterscotch chips, try using butter rum extract or butterscotch schnapps instead of the vanilla for extra flavor.
Blend pumpkin, egg, oil and sugar. Whisk together flour, baking powder, cinnamon and salt; gradually add to first mixture. Dissolve the baking soda in milk and add to batter. Stir in chocolate (or butterscotch) chips, nuts and vanilla.
Drop by the teaspoonful onto lightly greased baking sheets.
Bake at 370°F degrees for 10 to 12 minutes. Recipe can be doubled.
Bake and freeze the extra cookies.

Sounds delicious and white chocolate is my favorite! How many cookies does one batch make?

I made a double batch which gave me about 60 so if you just made one batch probably about 300 -
I'm a bit at a loss. Only 120 calories??? That's an awful lot for a cookie in my books
Plus what actually is the pumpkin replacing? There is still fat and carbs in the recipe?
I don't mean to sound rude or picky in anyway which I know it does, but I'm just interested as I have left over flesh today from a pumpkin and plan to make something with it 2mo so this got me interested.0 -

I use a website which allows you to put in everything that goes into the recipe and how many servings and it calculates everything for you. I'm assuming pumpkin would take the place of excess sugar. Like in chocolate chip cookies there is added brown sugar along with granulated sugar. Either way it is a cookie so I know that it's not the greatest thing to eat, but it's a little better than say a bowl of ice cream or a brownie!0 -

Oh definitely! The calories in some baked goods is just shocking. They sound delicious anyway.0
