Got this out of a woman's magazine and tweaked it a bit. I loved it, and amazingly so did my kids and boyfriend. Very hearty, low on calories, and leaves you full...Hope yall like it!!!

1-2 Chicken breasts, cubed
1 tbsp olive oil
1 tbsp minced garlic
1/2 onion, minced
1 tomato, diced
1/4 head cabbage, finely shredded
2 cups baby spinach leaves
2 cans low fat chicken broth
1 jalapeno, minced
1 large carrot, finely shredded

Brown chicken, onion, and garlic in olive oil in sauce pot. Add broth, carrot, jalapeno, and tomato. Bring to a boil. Take off heat and add cabbage and spinach leaves. Salt and pepper to taste. Top with 1 tbsp parmesan cheese. Delicious!!!!

Sounds good - I may have to try it once my current chicken soup is gone.
