Low Fat Vegetarian Bakes and Casseroles, Help!!

Hi all, winter time is rapidly approaching again and I am starting to feel the comfort food creeping back in trouble is I live a mainly vegetarian diet and Iam running out of tea time idea's. I have cook books galore but no "low fat" and alot of my cooking magazines have a lack of Vegetarian Recipes, So here's the thing I amlooking for Vegetarian Bakes or Caseroles something along these lines, I only cook for myself so idealy it would be someething I could portion and freeze any suggestions??

    I'm gluten-free, hence the theme to the sites I'm sharing. I imagine they can be made with non gluten-free ingredients as well. :)

    I don't know about low fat, but I am sure there are ways to substitute or reduce things. I love the recipe function on here for that reason.

    Do you have a crock pot (slow cooker)? There are endless chilli recipes that you could do. I make all my chili in the slow cooker so it's cooking while I'm at work, and dinner is ready when I get home.

    I love everything from the moosewood cookbook! Also I love a veggie sausage, mushroom and lentil bake, I use canned lentils because they don't need to be soaked then just put it all together with some seasoning or maybe some tomato sauce and bake til the sausages are done. Mmm.

    can of 98% fat free condensed cream of mushroom soup with zucchini, sweet potato, cauli, broccoli, carrots, mushrooms and beans, diced and sliced. Chuck all in the slow cooker and cook for 4 hours... towards the end take the lid off and add some cornflour to thicken. as a side dish only 104 cals. Its delicious :)

    Thanks for the help guy's, I'm going to have to look out for that cookbook and I love veggie sausages!
