My new Meatball recipe

I just made this tonight and thought I would share (I've been experimenting with various options to make this lower cal and lower carb than my usual meatballs & pasta favourite)


Beef Meatballs with veggies served with "spaghetti" made out of zucchini spirals

Coles - 5 Star Extra Lean Beef Mince
Quinoa, 50 g
Asian - Panko Bread Crumbs- 1 cup
Fresh - Red Onion, 1 cup
2 eggs
Masterfoods - Tomato Sauce, 10 ml (2 tsp)
Fresh Produce - Zucchini, 1 cup (grated)
Carrots - 7" Carrot, 1 cup 30 (grated)

Ardmona - Crushed Australian Vine Ripened Tomatoes, 2 cans
Leggo's - Tomato Paste No Added Salt
Fresh - Garlic (1 Clove), 1 medium clove

Grate 1 whole zucchini & 1 whole carrot. Press between paper towels to reduce moisture.
Cook 50g (about 1/2 cup) quinoa. Cool.

Combine with eggs, meat, panko breadcrumbs, half of the onion & tomato sauce. Make into about 12 large meatballs. Bake in the oven for 15 minutes, then turn over and bake for another 10 minutes

Cook the remaining onion in a pan, add the garlic and saute. Then add the 2 cans of crushed tomatoes, tomato paste and about 2 cups of water. Once it starts to thicken, add the meatballs and cook on low. I also added some chives & fresh basil from my garden.

Use a veggie twister to make spirals out of zucchini

Serve the meatballs on your zucchini "spaghetti" (serves 4, with 3 meatballs large per serve)

    ps - it comes out at about 385 calories per serve for the meatballs, 20 calories for the zucchini spaghetti and another 20 cals if you want to add a Tb of parmesan

    You do not list a quantity on tomato paste so I am assuming a small tin.

    Opps sorry, I'd say about 2 tablespoons
