AMAZING chickpea curry!!

Just stumbled upon this recipe for a spicy chickpea curry and it was WAY too good not to share - especially for the TINY calorie count (just 280 per serving - and it is no tiny serving haha)

Chickpea Curry
A vegan Indian dish to satisfy those cravings guilt free.
Ingredients

1 can diced/pureed tomatoes (nothing extra added)
1 tsp cinnamon
1/4 tsp ground cloves
1 tsp coriander (ground) or garam masala
1 tsp cumin
1 tsp turmeric
1 tsp fenugreek (optional but tastes great)
2 cloves garlic
1 tsp ginger root
1 medium onion,
350 grams garbanzo beans (chickpeas)
Directions

1. Sauté onions until tender.
2. Add garlic, ginger, cloves, cinnamon, cumin, coriander, salt, cayenne, and turmeric.
3. Cook for 1 minute over medium heat, stirring constantly.
4. Mix in tomatoes and rinsed garbanzo beans. Simmer for 20 minutes and stir frequently.
Note: makes 2 main dish or 4 side dish servings.

I boiled 100grams of uncooked basmati rice to go with it (50grams uncooked per person).


All up a grand total of 280 calories! And boy was it filling :) Still slightly amazed at the low calorie count but have checked and double checked it and it is completely accurate.

    This is brilliant! To be honest, I'd do the coriander AND the garam marsala. The more savory, the better. Good taste, good recipe. Awesome. Thank you!

    Onions saute great with a fat free cooking spray.

    No, no oil to saute - as someone mentioned i just use a quick spray of light canola oil cooking spray in a nonstick pan. Worked perfectly and no need to add any extra :)

    Yes the 280 calorie count includes the rice :).

    Yes they are from a can :). Just drain and you're good to go!

    If you are not much of a cook, I would suggest you use canned. rinse them well before adding to get rid of any residue. If you use dried beans, you have to soak them over night and then cook them until tender. Takes way too long for a quick meal like this.

  • I just made this-- delicious! Though I used arpus a cup and a half of Prego instead of diced or pureed tomatoes, but it turned out just fine, a cup for 240 calories. Thanks for sharing!
