Hi all,
I found another cookbook that is out of this world! I've been working through the reciepes for over 2 years now and all but maybe 5 or 6 of them I wouldn't make again.
It uses common things you stock instead of whacked out things you have to go buy and then might not use again for a long time. It has all the nutrition facts per serving on each reciepe and the exchanges also.
Better Homes and Gardens New Dieter's Cookbook IBSN 0-696-20714-1 hardcover and 0-696-21522-5 softcover
Here is one of the recipes just in case you want to try one first
4 small skinless, boneless chicken breast halves 12 oz toal
Nonstick spray coating
1 TBL honey
1 TBL orange juice
1/4 tsp ground ginger
1/4 tsp black pepper
Dash ground red pepper (optional)
3/4 C cornflakes, crushed (about 1/3 Cup)
1/2 tsp dried parsley flakes
Rinse chicken; pat dry with paper towels.
Spray a shallow baking pan with the nonstick coating.
Combine honey, orange juice, ginger, black and red pepper stir well until blended.
Combine cornflakes and parsley mix well.
Brush honey mixture onto both sides of the chicken and coat with cornflakes mixture.
Place in pan. Bake uncovered in a 350 degree oven for 18 to 20 minutes or until chicken is tender and no longer pink.
Makes 4 servings
Nurtition facts per serving: 127 calories, 3 g total fat (1 g saturated fat), 45 mg cholesterol, 94 mg sodium, 8 g carbohydrate, 0 g fiber, 17 g protein
Exchanges: 1/2 startch, 2 Lean Meat
Enjoy!
