I made the couscous dish last night.
I used ground beef instead of chicken. The reason I did this was because I had some thawed that I needed to use or it would have had to have been tossed. For my veggies I used corn and peas. The couscous I purchased was flavored, olive oil garlic. I never had couscous before and I wasn't entirely sure what I was going to think about it, but I really enjoyed it.
This is definitely quick and easy! My Monday nights are super hectic, so this was the best night for this.
On Thursday I'll be making the nuggets!0 -
I made the couscous dish (sort of) two nights ago...or DH made it :-)
We used pearl ( Israeli) couscous, which is larger and more like pasta. We used pork as the meat and I did zucchini and yellow squash as the veggies.
The meal was similar to our regular ones but it was good to have an excuse to use our new couscous!0 -
I made the chicken and zucchini today.
When it came to making the chicken I realized that I didn't have enough bread crumbs or ANY panko. So I pulled out some Saltine crackers and mashed them up and added them to the rest of the bread crumbs. Also, I didn't have garlic powder for the zucchini so I used onion powder instead.

We made the chicken & zucchini for dinner the other night. The chicken was a bit dry, but adding honey as a sauce to dip in made it better!
The zucchini (& onions & mushrooms for DH) we did in tempura batter instead and they were very good, but of course fried.
Next time we might try larger strips of chicken so they won't have to bake as long to brown but the baked "fried" chicken idea is very cool!0 -
