Guilt-free tuna salad sandwiches

I made this recipe up from trying to think of sandwiches that would incorporate all of the food groups. It's really great and definitely different from your every day tuna salad.

(yield 2-3 servings)
1 can tuna in water, drained
1/4c diced grapes
1/4c chopped red onion
1/4c chopped celery
2-3tbsp hummus (I use this instead of mayo)
1tbsp chopped walnuts
optional salt and/or pepper

Mix it all up, spread it on some multigrain bread (or my favorite---pumpernickel), and you're set!

It has your grains from the bread, fruit from the grapes, vegetables from the celery and onion, and protein from the tuna, hummus, and walnuts. I'm not a big dairy fan, but if you want to add a piece of cheese into the sandwich, that's great too.

    Yesss hummus. Diced apple in place of the grapes and celery is nice, too. :)

    The avocado sounds great!

    And no, I haven't calculated the calories yet in one...I'm kind of scared to find out that it might be more indulgent than I'd hoped, lol.

    Looks good! I love hummus, but i stil gotta have light mayo on my tuna. :)

    I calculated the calories (in my recipe box---I just joined yesterday, I have no clue if it's visible to others, lol), and *with* cheese, one sandwich is 323 calories. Given that you're getting a hearty sandwich with all four food groups, I think that sounds pretty good to me. :)
