Healthier Gingerbread?

Hi All,

I'm looking to make some gingerbread for Halloween and I was wondering if anybody had any idea's how to make this recipe a little healthier:

350g plain flour
1 tbsp ground ginger
1 tsp bicarbonate of soda
100g unsalted butter
150g light soft brown sugar
1 egg
4 tbsp golden syrup

I came up with 3 possible amendments:
1. use half plain and half wholemeal flour
2. reduce the amount of sugar used to maybe 100g
3. use Agave nectar instead of syrup

What do you think? Do I need to replace the sugar with something? I guess I couldn't reduce the butter as that's the 'glue' of the thing.

I'm in the UK so have no access to miracle US cooking products!

Anybody got any healthy ideas?

    It's sad that when I see the word Gingerbread, I never think of food, but the Android Operating System LOL.

    You could possibly replace the sugar with stevia, or do half stevia and half sugar. Not so sure how stevia is in baking, haven't tried it yet , but I can't detect much of a difference in coffee and tea.

    You could sub out the butter for 2 Tbsp oil and the rest of it as applesauce or pumpkin.

    I madeTrader Joe's gingerbread mix this past weekend using applesauce instead of oil and the difference in taste and texture was hardly noticeable. I'd give it a try!

    Applesauce is a little hard to come by but I've bought some apple baby food instead. Fingers crossed!
