quinoia ideas?

quinoia is one of the very best grains you could eat, I have had it from other people and loved it, i have ordered it at restaraunts and enjoyed it but have yet to make it at home in a way that I enjoy. Help me with any and all ideas about how to use quinoia!!!!!! Thanks

I've made it along with a vegetable stir fry and put the veggies on top of the quinoa as a replacement for rice.0

I like mixing mine with black beans, a bit of garlic/salt, and some avocado or cheese. I also make a quinoa/black bean/tomato/Italian dressing salad quite often!0

I love quinoa too! I used to work at a gluten-free bakery and we made rosemary quinoa flatbread. It was the best! It's made with ground quinoa and had just a handful of ingredients (I'm not remembering what they were, or the amounts...), but maybe look online. Really simple and fast, I think it was the quinoa flour with salt, water, rosemary and canola or safflower oil.
Now I need to go buy some too and get busy with the other suggestions!0 -

I like it as hot breakfast cereal, too (think cream of wheat substitute)0

We do it up real simple ... cook it with low sodium chicken broth instead of water and add some parmesan cheese ... YUM!0

It can be used in just about any dish you would have rice in.
Also, I really like it with acorn squash - cut the squash in half, scoop the seeds, bake upside down until you can pierce it with a fork. Turn it right side up, scoop a small amount of squash out (about a tbsp, maybe 2), and mix with prepared quinoa, nuts/seeds, dried fruit (I especially like it with dried cherries), and stuff that all back in the squash 'bowls'. Sprinkle with cheese/bread crumbs if you like and toast the top in the broiler. Delish
There's some brand that makes a quinoa/polenta mix that comes in a jimmy dean sausage type package, I LOVE it. I usually pop it in the freezer for about 15 minutes prior to cooking so I can slice it into circles and then pan fry them in just a smidge of olive oil. Those circles are delicious bases for all sorts of things, eggplant, cheese, bacon, etc. I've even used them to replace the english muffin in an eggs benedict style dish.0 -
A tasty quinoa side dish we have sometimes, hot or cold, makes two large servings about 170 cals each
Apricot Herb Quinoa
75g quinoa
5 dried apricots
zest and juice of half a lemon
2 teaspoons olive oil
some roughly chopped fresh parsley and mint
25g toasted sunflower seeds
Cook quinoa in water for about 20 mins and drain. Pour a little boiling water over apricots to plump them. Mix quinoa with lemon juice and zest, olive oil and add season to taste. Drain and chop apricots, stir in with herbs. Add sunflower seeds and serve.0
