these are wonderful little treats that i have made many times, both for my family and for dinner parties...everyone loves them and they have no idea that they are good for them.

2c non-fat cottage cheese (i use low fat because i never have non-fat around the house)
2 lg eggs
1 1/2 powdered sugar
1/3 c cocoa powder (unsweeened)
1T plus 1t of flour
1 1/2 t instant espresso powder (the first time i made them i left this out but it makes a huge difference!)
1 1/2 t pure vanilla extract
9 thin choc wafer cookies (like Famous brand)
whipped cream (optional)

put eveything in food processor and process until smooth (about 4 min) and scrape down the sides...it will be like cake batter. Fill reg muffin tin with 9 foil cupcake liners and spray with cooking spray. spoon the mixture into the cups and then top each cupcake with a Famous cookie. bake at 275 degrees for about 40-45 min. let cool completely then refrigerate for at least 1 1/2 hours. i keep them in a container with a lid for a few days (or as long as i can keep them hidden from my kids!). when you serve them, invert them on the plate and peel off the liner. top with a little whipped cream and now the Famous cookie is your crust. they are wonderful! the texture is perfect and nobody knows they are cottage cheese! hope you like them

    Figured it had to be! I saw your recipe right after I had a taste of Thai iced coffee cheesecake and was trying to think of something that might taste that good, but w/o the damage. My husband and I are really looking forward to these!
